Blueberry-pineapple muffins hit sweet spot

Making muffins from scratch is so easy and economical; there is no need to purchase a mix. Using fresh, seasonal add-ins to the basic muffin mix recipe creates a different flavor each time. Try the following combination while blueberries are fresh:
Basic muffin mix:
2 cups flour
½ cup sugar
1 tablespoon baking powder
½ teaspoon salt
1 egg, beaten until frothy
¼ cup vegetable oil
1 cup milk
Add-ins:
¾ cup crushed pineapple (drained)
1 ½ cups blueberries (purchased locally, of course!)
Chopped nuts
Caramel topping (optional):
½ cup brown sugar
3 tablespoons melted butter
½ teaspoon cinnamon
(When using the topping, do not overfill muffin cups—the mixture may drip out.)
Preheat oven to 400 degrees.
Mix dry ingredients first, and then stir in the wet ingredients.
Mix in the fruits and nuts.
Fill greased muffins cups about ½ full with muffin batter.
Dollop a spoonful or two of topping onto each muffin.
Bake at 400 degrees for 25 minutes.
