Coffee cake warms the holiday home
By preparing a master mix ahead of time, baking becomes convenient and effortless. From one mix, a variety of baked items can be created—a smart idea for the one responsible for keeping tummies satisfied (and for keeping peace in the family).
A yummy coffee cake can be ready for the oven in minutes. Soon, the whole house will smell like you’ve been baking all day. This recipe feeds about four to six people…great for breakfast. Double the recipe and employ more baking pans, if needed.
Coffee Cake:
Ingredients:
2 ¼ cups of master mix
1/3 cup sugar
1/3 cup milk
1 egg (beaten)
Topping:
½ cup brown sugar
3 tablespoons melted butter
½ teaspoon cinnamon
Grease an 8 x 8 baking pan. Preheat the oven to 400. In a bowl, stir the sugar into the mix. Combine the milk and egg then stir into the dry mixture. Pour into the 8 x 8 pan.
Combine the topping ingredients and either spread or dot the topping over the batter. Bake for about 25 minutes. (Use baking time to put some coffee on.)
